Gluten Free Peanut Butter & Jelly Waffles

This Gluten Free Peanut Butter Jelly & Waffles recipe will make you forget you’re eating gluten free!  This recipe will give you fluffy waffles full of yummy peanut butter and jelly flavors!

This is seriously the best gluten free waffle recipe I have ever made. Even my non-gluten free son wants these every day now! They are fluffy and have tons of peanut butter flavor! And you can't help but love the classic peanut butter and jelly flavor!

When I told my 9-year-old son, Jaxon, that  I  needed to create an original recipe using peanut butter and jelly, he said, “You can leave this one up to me!”  He’s probably the only person on the planet who loves peanut butter and jelly sandwiches more than I do!

Unfortunately, his first idea was not going to work out like he thought it would.  After a little trial and error and some tweaking here and there, he finally decided on the winning recipe: Peanut Butter & Jelly Waffles!  I tweaked his idea a little more and we decided on making Gluten Free Peanut Butter & Jelly Waffles.

Shopping for Ingredients

We headed over to Target to get everything we would need.  Target is my favorite store for home decor, office supplies, and clothing.  Being able to buy groceries there as well is a huge bonus!  It’s also the only store I can drag Jaxon to without hearing any complaining!  They really do have something for everyone and I am totally that person who goes in needing a few things and coming out with ten times as much!

Wanting to keep things healthier for all of my exciting, life-changing New Year’s resolutions, I decided to make this recipe gluten-free and lower in carbs than tradition waffle recipes by using a combination of tapioca flour and coconut flour.

The results were far beyond my expectations and Jaxon has requested that I make a batch every week so he can have one before school every morning!  I am totally on board with giving him a healthy breakfast he loves before he hops on the bus!  I hope you love them just as much!

How to Use the Target Cartwheel App

Instructions
  1. Preheat your waffle iron (I use setting 4 on mine).
  2. In a medium bowl combine the tapioca flour, coconut flour, baking soda, baking powder, and salt. Mix. Add the almond milk, eggs, butter, and peanut butter. Whisk until well combined.
  3. Pour mixture into the preheated waffle iron (working in batches, if necessary). Cook until waffles are cooked through and edges are just crispy, about 4 minutes.
  4. Top with the Smucker's Fruit Spread of your choice and enjoy!

Even though it’s technically still Summer, and the weather has yet to cool off around here, the smell of pumpkin spice in the air has me overly, ridiculously excited about the upcoming Fall season!  I’ve got quite a list of recipes in the works, and first up is this Pumpkin Pie Spiced Coffee cake with an unexpected ingredient!

Every year it seems the Fall season starts earlier and  this year has been no exception.  I’m not complaining at all because it means I could get my hands on International Delight® Pumpkin Pie Spice Coffee Creamer that much sooner!  I’ve been enjoying it (and the new Chocolate Hazelnut flavor) in my coffee every morning already but started wondering what else I could use it for.

Last Fall I tried pumpkin in cookies for the first time ever and was instantly hooked.  I planned to attempt to create a pumpkin-flavored coffee cake this season and decided I’d try to use the Pumpkin Pie Spice Coffee Creamer in place of milk to give my cake even more pumpkiny spicy goodness!  It worked fabulously!  Seriously, if you love pumpkin spice, this one’s for you!

This cake turned out to be incredibly moist with tons spicy pumpkin flavor!  Each bite I took I questioned over and over again why the heck I was so against trying anything pumpkin for so long. This is most definitely the perfect treat to serve when you have company over this Fall.  It works for a yummy seasonal breakfast or an afternoon treat with a cup of coffee.  Heck, I’d eat it for lunch and dinner too!  I really missed out for a lot of years, so I say that it’s only fair that I should make up for it now, right?

Of course, this has peaked my curiosity as to what else can be done with the oh-so-addicting International Delight Pumpkin Pie Spice Coffee Creamer!  Got any ideas?  I’d love to hear them!  In the meantime, I’m going to eat this cake alongside my coffee and just bask in all the pumpkin and spice for as long as I possibly can this wonderful Fall season before it’s on to the next big holiday (and more fun coffee creamer flavors)!

  1. Preheat oven to 350 degrees F. In a small bowl combine the flour, baking powder, baking soda, and salt. Set aside.
  2. In an electric mixer, cream the butter and sugar together. Add the eggs one at a time. Slowly add the International Delight® Pumpkin Pie Spice Coffee Creamer, pumpkin puree, and pumpkin pie spice. Gradually mix in the flour mixture a little at a time until everything is well blended. Spread evenly into a greased 13 x 9 inch pan.
  3. In the same small bowl you used for the flour mixture mash together all the ingredients for the topping with a fork until moist crumbles form. Sprinkle the crumbs evenly over the cake batter.
  4. Bake for approximately 40 minutes, or until a toothpick inserted into the center comes out clean. Let cool before serving. Enjoy!

Need a plain ole gluten free chocolate cookie?  One that tastes great and won’t crumble into a million pieces?  One you can add your choice of mix-ins to and it’ll hold up?  You found it!  These Gluten Free Basic Chocolate Cookies are delicious on their own,or change it up and add your choice of mix ins to the recipe!  Chocolate chips, caramel, nuts, and dried fruit all work great with this recipe!

The only differences between this recipe and my non-gluten free version, are that I used Pillsbury Gluten Free Flour Blend (King Arthur’s brand is great too) and regular unsweetened cocoa powder (instead of dark cocoa).  This recipe will give you a thicker cookie that can handle mix-ins really well!  It will be chewy in the center and crispy on the edges.  While it won’t crumble into pieces, some breakage can occur (common of a lot of gluten free baked goods unfortunately), however, it was far less than other recipes I’ve tried and did not stop my boyfriend from eating almost the entire batch of cookies!  My 8 year old son ate the rest and didn’t even seem to notice they were gluten free!

Gluten Free Chocolate Cookie Varieties

The Silpat mat shown above is one of my all time favorite baking discoveries!  I use it for everything from cookies, to toasting nuts or seeds, and even sometimes under a broiler pan to make clean up easier!  Amazon even had their own less expensive version now!   I highly recommend these instead of laying foil down or greasing/oiling to prevent the cookies from sticking!

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl mix together the butter and sugar in an electric blender on low-med speed. Add the eggs one at a time, then the vanilla.
  3. In a second bowl combine the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add to the wet ingredients until well combined. Stir in mix-in's if you're using them.
  4. Drop by tablespoons about 2 inches apart on a baking sheet (I use a Silpat Mat to prevent sticking). Bake 8-9 minutes until cooked through. LET COOL before removing from the baking sheet to prevent them from breaking. Enjoy!
