Gluten Free Peanut Butter & Jelly Waffles

This Gluten Free Peanut Butter Jelly & Waffles recipe will make you forget you’re eating gluten free!  This recipe will give you fluffy waffles full of yummy peanut butter and jelly flavors!

This is seriously the best gluten free waffle recipe I have ever made. Even my non-gluten free son wants these every day now! They are fluffy and have tons of peanut butter flavor! And you can't help but love the classic peanut butter and jelly flavor!

When I told my 9-year-old son, Jaxon, that  I  needed to create an original recipe using peanut butter and jelly, he said, “You can leave this one up to me!”  He’s probably the only person on the planet who loves peanut butter and jelly sandwiches more than I do!

Unfortunately, his first idea was not going to work out like he thought it would.  After a little trial and error and some tweaking here and there, he finally decided on the winning recipe: Peanut Butter & Jelly Waffles!  I tweaked his idea a little more and we decided on making Gluten Free Peanut Butter & Jelly Waffles.

Shopping for Ingredients

We headed over to Target to get everything we would need.  Target is my favorite store for home decor, office supplies, and clothing.  Being able to buy groceries there as well is a huge bonus!  It’s also the only store I can drag Jaxon to without hearing any complaining!  They really do have something for everyone and I am totally that person who goes in needing a few things and coming out with ten times as much!

We ended up buying a huge jar of Jaxon’s favorite, Jif Creamy Peanut Butter, and Smucker’s Fruit & Honey Strawberry Fruit Spread.  Right now you can save 5% on Jif and Smucker’s products when you use the Target Cartwheel app!

Wanting to keep things healthier for all of my exciting, life-changing New Year’s resolutions, I decided to make this recipe gluten-free and lower in carbs than tradition waffle recipes by using a combination of tapioca flour and coconut flour.

The results were far beyond my expectations and Jaxon has requested that I make a batch every week so he can have one before school every morning!  I am totally on board with giving him a healthy breakfast he loves before he hops on the bus!  I hope you love them just as much!

How to Use the Target Cartwheel App

The first time I ever used the Target Cartwheel app, I did it all wrong, so I wanted to include a quick tutorial on how to use it so you can be sure to get your savings!

Instructions
  1. Preheat your waffle iron (I use setting 4 on mine).
  2. In a medium bowl combine the tapioca flour, coconut flour, baking soda, baking powder, and salt. Mix. Add the almond milk, eggs, butter, and peanut butter. Whisk until well combined.
  3. Pour mixture into the preheated waffle iron (working in batches, if necessary). Cook until waffles are cooked through and edges are just crispy, about 4 minutes.
  4. Top with the Smucker's Fruit Spread of your choice and enjoy!

Parmesan Lemon Risotto

I pretty much love anything with cheese and being that I’m Italian, it would be odd if I didn’t love risotto as much as I do!  I’ve never had a risotto I didn’t like, but this Parmesan Lemon Risotto recipe I just put together, is my current favorite…ever.

I started off planning to make a butternut squash risotto, then somehow decided it would be a Parmesan Lemon risotto instead.  Finally, I decided at the last minute to cube and roast the squash (that I had bought to make risotto with anyway!) and mix it into my Parmesan Lemon Risotto (yes, I am your typical mind-changing female).

I was a little worried it wasn’t going to work out.  I really had no idea it was going to turn out amazing, but it did!  Not gonna lie…I didn’t share. I didn’t even tell anyone I made it – ha!

In my recipe post for Pumpkin Risotto, I mentioned how risotto has this reputation of being difficult to make.  It’s intimidating, I get it.  I was there too.  But, I can honestly tell you – it’s not hard!  Just be sure to use arborio rice and be prepared to stir, stir, and stir some more.

I was literally stirring with one hand, cleaning up the mess I had made with the other, and trying to feed the baby bits of turkey and cheese all at once and mine still turned out just fine!  You can do it!

Obviously, this Parmesan Lemon Risotto Recipe with Roasted Butternut Squash is delicious on its own, but I think it would be a great side dish as well.  I’m planning to serve it at Thanksgiving this year!

Instructions
  1. Preheat oven to 425F. Mix the butternut squash and olive oil in a small bowl and season with salt and pepper. Spread onto a baking sheet and roast until just caramelized, about 30 minutes.
  2. In a large, deep skillet, or dutch oven, add 1 Tablespoon of olive oil over medium-high heat. Add the garlic and shallot and cook until soft, about 3-4 minutes. Mix in the rice and lemon zest, then add the wine. Cook until the wine is absorbed.
  3. Add 3 cups of the stock in one cup at a time, letting each cup absorb fully before adding the next, then add the last cup of stock 1/4 Cup at a time until rice is cooked as desired (I used about a 1/2 cup).
  4. Once all the stock is absorbed, remove from heat and stir in the lemon juice, butter, and Parmesan cheese and stir to combine.
  5. Fold in the butternut squash and serve immediately.

Sometimes switching things up a bit turns out to be a delicious decision!  That is most definitely the case when I took a break from my beloved peanut butter to develop this Amazing No-Bake Sesame Vanilla Oat Bars recipe!

I have only ever used sesame butter in hummus recipes.  I’ve also enjoyed my fair share of sesame chicken.  For this recipe challenge, I chose to use it in a way I never had before – in a dessert!

Amazing No Bake Sesame Vanilla Oat Bars

I love peanut butter and eat it almost every single day.  I’ve probably eaten more peanut butter and jelly sandwiches for lunch than any other meal, even as an adult!  It’s also the star in countless desserts!  Peanut Butter Pie, Peanut Butter Cupcakes, Peanut Butter Ice Cream!  It’s everywhere! But, sometimes a little change is good too!  A spin on the classic that’s equally delicious!  That was my goal when creating these No-Bake Sesame Vanilla Oat Bars.  They had to be delicious, yet different.  And of course, they had to be amazing!

I chose to use Simply Sesame in the Vanilla with Almond Bits flavor for these bars.  The vanilla flavor really comes through and the almond bits add a little crunch!

Making these No-Bake Sesame Vanilla Oat Bars is super easy!  It’s just a matter of melting some butter in a pan, and gradually mixing in all the remaining ingredients until you get a stiff batter. Then all you have to do is spread the batter into a pan, top with mini chocolate chips if you so desire (I highly recommend it!), and finally, refrigerate them for a few hours.

You can serve No-Bake Sesame Vanilla Oat Bars at your holiday gatherings, kid’s parties, bake sales, or just because!  They make a great little treat after dinner too!

Instructions
  1. Melt butter in a medium saucepan over medium heat. Stir in the sugar, milk, and Simply Sesame until well-blended and smooth. Mix in the oats a 1/2 cup at a time, until the mixture is stiff (you can add more oats if needed).
  2. Line a square baking pan with parchment paper leaving extra paper over the sides of the pan. Spread the oat mixture into the pan, pressing it in evenly. Top with mini chocolate chips, if desired.
  3. Refrigerate until firm, about 4 hours. To cut, lift the bars out of the pan with the parchment paper, place on a cutting board, and cut into 9 bars. Store any extras in the refrigerator.
