Amazing No-Bake Sesame Vanilla Oat Bars

Sometimes switching things up a bit turns out to be a delicious decision!  That is most definitely the case when I took a break from my beloved peanut butter to develop this Amazing No-Bake Sesame Vanilla Oat Bars recipe!

I have only ever used sesame butter in hummus recipes.  I’ve also enjoyed my fair share of sesame chicken.  For this recipe challenge, I chose to use it in a way I never had before – in a dessert!

Amazing No Bake Sesame Vanilla Oat Bars

I love peanut butter and eat it almost every single day.  I’ve probably eaten more peanut butter and jelly sandwiches for lunch than any other meal, even as an adult!  It’s also the star in countless desserts!  Peanut Butter Pie, Peanut Butter Cupcakes, Peanut Butter Ice Cream!  It’s everywhere! But, sometimes a little change is good too!  A spin on the classic that’s equally delicious!  That was my goal when creating these No-Bake Sesame Vanilla Oat Bars.  They had to be delicious, yet different.  And of course, they had to be amazing!

I chose to use Simply Sesame in the Vanilla with Almond Bits flavor for these bars.  The vanilla flavor really comes through and the almond bits add a little crunch!

Making these No-Bake Sesame Vanilla Oat Bars is super easy!  It’s just a matter of melting some butter in a pan, and gradually mixing in all the remaining ingredients until you get a stiff batter. Then all you have to do is spread the batter into a pan, top with mini chocolate chips if you so desire (I highly recommend it!), and finally, refrigerate them for a few hours.

Lately, I have had brunch on the brain.  I have been thinking to make a whole spread filled with delicious brunch recipes one weekend for my boys, but haven’t quite figured out exactly what foods are brunch appropriate!

The only thing that came to mind (so far) is Lemon Ricotta Pancakes.  Why?  Because I went to brunch once and that’s what I ordered.  And they were amazing!  So amazing that I haven’t forgotten about them in all the years that have passed since that one meal!

Simple Lemon Ricotta Pancakes

So I went scouring the internet recently for a Lemon Ricotta Pancakes recipe I could use to make for breakfast one morning and quickly got fed up.  Nothing I found was quite what I was looking for. Most recipes seemed too complicated for a meal that I tend to make when I’m still half-asleep.  I need an easy pancakes recipe!

So that’s what I came up with!  A simple Lemon Ricotta Pancakes recipe!

Simple Lemon Ricotta Pancakes

My recipe for these easy Lemon Ricotta Pancakes involves just a few simple steps and the ability to flip pancakes – that’s the hard part!  Stack them up, sprinkle on some powder sugar and finish them off with a few raspberries to fancy them up if you want, and viola!  Brunch is served!

With all this talk of brunch, let’s be real here…these pancakes are the perfect breakfast recipe as well!  Or, try them the next time you’re having breakfast for dinner!

I think you and your family or friends will love them!  My 9-year-old told me they are his second favorite pancakes…after a popular frozen brand!  Normally I’d be a little offended but he’s a 9-year-old who loves Lemon Ricotta Pancakes!  I can’t complain about that!

Simple Lemon Ricotta Pancakes

Hopefully, you’ll agree that this is not only the easiest Lemon Ricotta Pancakes recipe but also the most delicious!!

These are definitely going on to my brunch menu someday!  If you have any brunch suggestions I would love to hear them! Leave a comment and let me know what your absolute favorite brunch foods are – I really need some good ideas!

Nutmeg Rice

Nutmeg Rice is a recipe that comes straight from my dad!  He used to make it as a snack for himself when I was a kid.  It’s sweet and spicy and has a definite warmth to it that reminds me of traditional Fall flavors.  I have not made this recipe in years!  In fact, I don’t know if I’ve ever made it since leaving home until now!

Nutmeg Rice

I’m always trying to find fun, easy recipes to get Jaxon in the kitchen with me and thought it would be special for him to make a recipe that my dad taught me.  Jaxon’s attention span, like a lot of other kids, is short.  This recipe can be made easily and quickly and really make your child feel like they’ve made something awesome the whole family can enjoy!

Nutmeg Rice

I’ve strayed ever so slightly from my dad’s version.  He uses white rice but I wanted to create a dish that tasted of Fall flavors and had a more seasonal look to it as well!  I decided to use Uncle Ben’s Ready Rice in the Brown, Red, and Black Rice flavor.  It not only has the look and flavor I want, but the microwavable packs make it quicker and easier for kids to help cook. Jaxon is still afraid of the stove, so these are a great option for us!  There is also an Ibotta offer for $0.75 with the purchase of any Uncle Ben’s Ready Rice at Walmart so you can actually earn cash back when you buy it!

Making Nutmeg Rice is super easy!

Nutmeg Rice is delicious on its own just like how my dad used to eat it, but also makes a great side dish!
