With school back in session, I’m all about quick, easy, and good-for-us food!  That includes Benjamin too, of course!  Technically, at the ripe old age of 15 months, he’s now considered a toddler.  An active, happy, toddler who seems to want to eat or drink non-stop at the moment, even though he’s teething like crazy!

Possibly because of Benjamin’s diagnosis of a form of dwarfism, he refused to eat from a spoon for quite some time and gagged on anything solid.  Sometimes, he still does.  His speech therapist thinks that it could be due to him not having as much room due to average sized tonsils and adenoids in his smaller than average sized mouth.  He’s getting better every day, but now he’s teething and I’ve had to get even more creative with how and what I feed him.

Before school started back up, I could sit him in his highchair and allow him to take 30 or more minutes to eat.  Now that we are back in our crazy busy back-to-school routine, we just don’t have that kind of time in the morning.  Peanut butter is one of Benjamin’s favorite foods and I can get him to eat almost anything if there is peanut butter on it or in it.  I decided to create these Homemade Peanut Butter Teething Cookies with Go & Grow by Similac® Mix-Ins™ (Right now you can earn $3.00 from Ibotta when you buy a box of Go & Grow by Similac® Mix-Ins™!)  He can chew on them and they just get mushy, rather than break off in chunks that he can’t quite tolerate yet. The cookies are so quick and easy to make that I just bake one at a time as I need them.  Mixing the batter together takes a few minutes and baking them takes about 6-7 minutes.  I can have a fresh cookie made and cooling before the boys even wake up in the morning.  That’s one less thing to try to get done while we are rushing through our back-to-school morning routine!

To help Benjamin get more of his nutritional needs met, I use one packet of Go & Grow by Similac® Mix-Ins™ per cookie and only give him 1-2 cookies per day.  Each single serving packet provides nutrients to support growth and development as babies become toddlers.  They are the perfect secret weapon for moms to help their children get added nutrition! Instructions
  1. Preheat oven to 425 degrees F.
  2. In a small bowl mash together the flour, peanut butter, Go & Grow by Similac® Mix-Ins™ (Use one packet of Go & Grow by Similac® Mix-Ins™ for one serving (or ½ cup of food) and the coconut oil. Slowly add the water until a sticky, but workable dough forms. You may need slightly more or slightly less water.
  3. On parchment paper or a Silpat mat, form the dough into desired shape about 1/2" thick.
  4. Bake 6-7 minutes or until dark and firm. Let cool completely before serving.

This recipe is for children age one and older only.  Do not give these cookies to babies under age one and never leave child unattended while eating, due to the potential choking hazard.

Butterfinger Brownie Cheesecake Bars

I get inspiration every single day from the food I eat out, or by recipes I stumble across online.  It’s the way that most of my own recipes are born.  So, when I first saw these new, premium Nestle Toll House Baking Mixes, I knew I had to have them!  I got excited as idea after idea popped into my head!  They are versatile mixes you can bake as is, or you can add your own special twist to them!  I picked up one of each at Food Lion (and earned $0.75 from Ibotta!).

There are four different Nestle Toll House Baking Mixes: Brownies & More with Butterfinger Bits, Brownies & More with Chocolate Morsels, Cookies & More with Butterfinger Bits, and Cookies & More with Chocolate Morsels.  Since every person in my house loves peanut butter and chocolate, I decided to try out the Brownies & More with Butterfinger Baking Bits first.  I, myself, have been craving cheesecake lately so it only made sense that I should combine the two.

I decided to use the Nestle Toll House Baking Mix as a “crust” for what I am calling Butterfinger Brownie Cheesecake Bars.  You get a full cup of Butterfinger baking bits so I used half in the brownie mix and saved the other half to use as a topping!  I wanted a thinner bottom to my bars so I divided the mixture between two 8-inch square pans, but you could totally make them thicker if that’s your preference.  I included instructions for both methods down below.

I then topped the Butterfinger brownie crust with a no-bake cheesecake that’s super simple to whip up!  It’s just four ingredients!  Four!  I have to tell you, this was so much easier than traditional cheesecake and the final result was delicious!

Finally, I put the remaining Butterfinger baking bits all over the top, pressed them in slightly, and put the whole pan in the refrigerator for about 3 hours before cutting into bars.

The final results were better than I even imagined!   I tried the brownie portion by itself and it was amazing even on its own!  For me, the cheesecake portion just made it that much better!  Two of my favorites combined into one decadent treat?!?  Yes, please!

My 9-year-old, Jaxon, told me he doesn’t like cheesecake.  My fiance, Daryl, has told me he doesn’t like it either, nor does he like brownies.  Both were still willing to try these Butterfinger Brownie Cheesecake Bars and guess what?  Yep!  Jaxon said “These are GOOD!” and Daryl’s response was “I guess I like them together?”  Yes, yes you do.  Because the entire first pan is gone and I only ate two!

  1. Preheat oven to 325 degrees F. Prepare NESTLÉ® TOLL HOUSE® Brownies & More Chocolate Baking Mix with Butterfinger Baking Bits as directed on box for Brownies but mix in 1/2 Cup of the Butterfinger Baking Bits. Spread the batter into two foiled lined and greased 8-inch baking pans for thinner crust or one 8-inch baking pan for a thicker crust. Bake 16-18 minutes if using two pans, or 25 minutes if using one pan.

  2. In an electric mixer bowl, beat cream cheese, sugar, and vanilla extract until well blended. Stir in whipped topping. Batter will be thick. Divide evenly over the crust(s) and smooth the top.

  3. Sprinkle on the remaining 1/2 Cup of Butterfinger Baking Bits and gently press into the cheesecake layer. Refrigerate 3 hours, until firm.

  4. Remove from pan and cut into bars. Store remaining bars in the refrigerator.

How to make the perfect blueberry sauce!

I have to be honest here.  Blueberries are not my favorite fruit to eat raw.  My son could eat an entire container by himself, but I tend to gravitate more towards strawberries and raspberries in that case.  However, when it comes to recipes using cooked fruit, give can just pass me everything blueberry!  I make an addicting Blueberry Muffin (I’ll have to get that recipe up soon!) and this Perfect Blueberry Sauce I am going to share with you here is amazing on so many different things!

This sauce comes together easily and quickly when needed.  I’ve also made it ahead of time, kept it in the fridge, and then reheated it when I was ready to use it.  And…I wouldn’t judge you if you decided to eat it straight out of the pan – it’s so good!

Perfect Blueberry Sauce on a Napoleon

I most recently used this sauce as the topping on a Red, White, and Blue Triple Berry Napoleon (a patriotic inspired dessert, yes, but delicious any time of year!).  Other ways you could use this sauce would be to swirl it in oatmeal, as an ice cream sundae topping, or mixed into yogurt!  You could also try it on top of a cheesecake, spread onto waffles, or as a delicious topping on a hot stack of pancakes, of course!  From breakfast to dessert, the possibilities are truly endless!
